RECIPE OF TORTILLA OF POTATO STUFFED WITH GOAT CHEESE AND CARAMELIZED ONION:
1.- Peel the onions and cut them into julienne, that is, into thin strips. Then, in a pot, add a little olive oil to heat over low heat and add the chopped onions. We put a small amount of salt and let cook, always on low heat for about two hours, stirring frequently. With the passage of time, we will see how the onion is becoming more and browner until the end, caramelized completely, at which time we will remove it and let cool.
2.- Peel the potato and chop it into small pieces. Then, in a pan, put a good amount of oil to heat, over medium heat and add the chopped potato. We add only a small amount of salt because the goat cheese has its share and if we pass, it will be very salty. Mix with a wooden spoon and let it cook for 20 minutes.
3.- After the time, the potato will soften, at which time we will add the goat cheese cut into pieces. Afterward, we will begin to crush with the wooden spoon. The idea is to achieve a kind of potato and cheese purée.
4.- When it is completely undone, turn off the heat and add the caramelized onions. We mix well with the wooden spoon.

6.- Put a small splash of oil in a smaller pan and fit the size of the tortilla that we are going to make (with these measures, about 20cm in diameter).
