Tortilla Of Potatoes Stuffed With Goat Chese And Caramelized Onion


1.- Peel the onions and cut them into julienne, that is, into thin strips. Then, in a pot, add a little olive oil to heat over low heat and add the chopped onions. We put a small amount of salt and let cook, always on low heat for about two hours, stirring frequently. With the passage of time, we will see how the onion is becoming more and browner until the end, caramelized completely, at which time we will remove it and let cool.


2.- Peel the potato and chop it into small pieces. Then, in a pan, put a good amount of oil to heat, over medium heat and add the chopped potato. We add only a small amount of salt because the goat cheese has its share and if we pass, it will be very salty. Mix with a wooden spoon and let it cook for 20 minutes.


3.- After the time, the potato will soften, at which time we will add the goat cheese cut into pieces. Afterward, we will begin to crush with the wooden spoon. The idea is to achieve a kind of potato and cheese purée.

4.- When it is completely undone, turn off the heat and add the caramelized onions. We mix well with the wooden spoon.


5.- In a bowl, we put the eggs and beat them just enough so that they integrate yolk and egg white. About 30 seconds Next, we add the mixture of potato, caramelized onion, and goat cheese and mix everything until obtaining a homogeneous mass.


6.- Put a small splash of oil in a smaller pan and fit the size of the tortilla that we are going to make (with these measures, about 20cm in diameter). The pan, which is non-stick so that it does not stick. Heat over medium heat and add the mixture. We let this part cook for 3 minutes. 5 if you want more curd.


7.- We turn it over with the help of a plate and return it to the pan. With the spoon, we go over the edges, to go lifting them and make the tortilla is rounder. That has a better presence. We let this face cook at the same time as the other. Remove and serve.
